There has been a lot of times where I have been holding an M41A, and I've gotten attacked while doing something with my offhand. This usually results in me fumbling around trying to grip the rifle with both hands before being taken down without firing a shot. While far from practical, I think you should be able to fire an M41A with one hand as a last resort, or at least to buy some time to grip the weapon properly.
Firing a weapon with one hand would result in higher recoil (more screen shaking), less accuracy(bullets are more likely to narrowly miss than hit) and a chance to knock the weapon out of the user's hand. Firing a weapon this way would be less about actually hitting and killing your target, but more about scaring them away should you be unable to properly hold your weapon. One in every eight shots fired at a stationary target should effectively hit firing this way.
Shooting a weapon this way would provide messages such as, "Joushuu fires the M41A wildly with one hand" followed by "Please grip the weapon with both hands".
Similarly, the shotgun should also be able to be fired this way as well, but would result in even higher recoil and a very high chance of disarming the user.
